Our Story

Cellar West was founded in late 2016 by traveled brewer Zach Nichols. With a little help of some friends, Zach's longstanding dream of a small, artisanal beer company was brought to life in a little garage space in North Boulder. There, nestled at the base of the foothills, we made tiny batches of Saison & barrel aged Farmhouse Ale - a longstanding passion of Zach's. These beers quickly caught the attention of enthusiasts, earning us a medal at the Great American Beer Festival & the honor of BeerAdvocate's "Best New Breweries in America." After a couple years, an 11 mile move would land Cellar West in nearby Lafayette, Colorado. This relocation to the Boulder County countryside added more space for seating, an expanded brewhouse and additional beer styles. Then, in 2025, we opened our cozy tap room & kitchen in Erie to better serve our East Boulder & Weld County friends.

Our Beer

We brew on a 7-barrel brewhouse made of Colorado-fabricated tanks, modified Wisconsin dairy equipment, secondhand 7 & 15-barrel fermenters, & other well-worn cellar parts. Unfiltered lagers, naturally conditioned farmhouse ales, old-school IPA's, British pub ale. Hands-on and low-intervention is our approach to brewing.
